Wednesday, September 4th, over 250 joined their church family for fellowship, fun and food! Judy Viktora, volunteer chef and her assistant, Susan Gulden prepared a wonderful chicken dish served with rice and sautéed vegetables. Just like every Wednesday Night Supper, the meal was served with a full salad bar, roll and dessert. The dish was enjoyed by all and many requested the recipe. Just your luck, Judy was willing to share her secrets. Feel free to prepare the dish at home or join us next week for another delicious meal.

Baked Viktora Chicken
- 8 Chicken Breast (boneless and skinless)
- Bake in the following marinate:
- ½ stick Butter (melted)
- ½ cup of Dark Brown Sugar (packed)
- ½ cup of Soy Sauce (low in sodium)
- ½ cup of Lemon Juice
Melt butter in 11×13 casserole dish or pan and add the next three ingredients. Place chicken into marinate and turn over. Lightly salt and pepper chicken. Bake in a preheated 350 degree oven for 45 minutes.
Remove chicken from the oven and turn each breast over. Spread topping of ½ tsp of Mayonnaise on each breast and cover with parmesan cheese. Place back into the oven for about 15 minutes until the chicken is slightly browned.
Serve with long grain wild rice adding the cooked marinate/juices to your dish. Other green sides that go well with this dish are broccoli, green beans or asparagus. Enjoy!
