The menu of the week!

While I’m in Guatemala, I always take a picture of each meal I eat. Not only do we eat delicious and mostly authentic meals, but we eat A LOT. So this is essentially going to be a blog about what I and everyone else loves, food.

The Impacto staff prepares safe and amazing meals for our whole group to eat 3 times a day. So for 5 days in chronological order, this is what our team has eaten.

Right after we landed in Guatemala City and got on the chicken bus, we were given a sack lunch of chips (like Fritos), PB&J, a ham and cheese sandwich, cookies (like Oreos), and Mexican Coca-Cola.

Then 2 hours into our bus ride, we stopped at our typical rest stop (Katok) and Pastor Jonathan ordered a hot chocolate (sweater weather?) and Carlos bought a loaf of bread with, what we call, “futella” (fake Nutella) which we all shared.

Finally, for our first dinner we had chicken, mashed potatoes, carrots, and fresh pineapple. [Side note: with every meal we usually have a type of bread roll (the sweet rolls are my fav), a cookie, and lots and lots of Guatemalan coffee.]

Breakfast the next day was a typical local breakfast of tortillas, scrambled eggs, frijoles (re-fried beans), fried plantains, and the Guatemala version of oatmeal, which they call Mosh (Essentially just rice and milk).

For lunch we had sandwiches and chips again, followed by spaghetti, salad, and pineapple for dinner.

Now Sunday was a real treat! Our sabbath day was filled with rest, tourism, and FOOD. Breakfast at the Promised Land property consisted of amazing pancakes flavored with cinnamon (I look forward to these all year), oatmeal, scrambled eggs with ham, and a banana.

For lunch, we had pork, potato salad, squash, and watermelon. But we had no idea what was ahead of us for the rest of the day!

After that, we went into downtown San Pedro and indulged in the most delicious food at the cutest cafe in town named Sababa. While swinging on the swings and staring off into the lake, we drank fresh smoothies. And Carlos ordered a special sandwich and let everyone have a bite (Pastor David said it was the best thing he’s ever eaten). We also ate tortillas filled with Nutella, PB, bananas, and the whole 9-yards. Rich and delicious.

Then finally, back at the Promised Land, dinner was grilled cheese, tomato soup, and watermelon.

On Monday, for breakfast, we ate egg/cheese/ham sandwiches, potatoes, and pineapple.

Dinner was chicken, rice, cheesy broccoli, pineapple, and Jonathan treated us to an array of sodas.

Finally, our Tuesday meals consisted of a traditional breakfast and sandwiches for lunch. Dinner was SOO good! We had chicken, potato salad, pico de gallo, and fresh mangos.

Although we’ve only been here 5 days, we still can’t wait for more meals to come! We’ll only have one more day of Impacto meals, then we will be venturing to other places in Guatemala as we travel home.

Bitter sweet. (No pun intended)

    Wow! That is some delicious looking and sounding food 😋. Christopher said he wishes Macy and him could go on this trip with all. I told him – maybe one day y’all can.     Abby, this was awesome !
    The pictures of the food is a plus for us to see. In fact, the picture of Jonathan drinking his hot chocolate is one of my favorites. The slats in the window behind him look like Jesus’ Cross over looking you all. — Emmanuel

    I wish you could bring some of the food home. Or maybe a recipe ?
